A flavorful and easy chicken curry perfect for a quick homemade meal.

Ingredients
  • 500g chicken breast, cut into bite-sized pieces
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp (5g) ginger, grated
  • 2 tbsp (30g) curry powder
  • 1 can (400ml) coconut milk
  • 1 cup (250ml) chicken broth
  • 1 tbsp (15ml) olive oil
  • Salt and pepper to taste
  • Fresh coriander for garnish (optional)
Method
  1. Heat olive oil in a pan over medium heat.
  2. Sauté onion, garlic, and ginger until fragrant.
  3. Add chicken and cook until browned.
  4. Stir in curry powder, mixing well.
  5. Pour in coconut milk and chicken broth. Bring to a simmer.
  6. Cook for 15-20 minutes until the chicken is tender and the sauce thickens.
  7. Season with salt and pepper.
  8. Garnish with fresh coriander and serve with rice or naan.
