A light and refreshing salad packed with Mediterranean flavors, perfect for meal prep.

Ingredients
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup (150g) cherry tomatoes, halved
  • 1/4 cup (40g) red onion, finely chopped
  • 1/4 cup (30g) olives, sliced
  • 2 tbsp (30g) feta cheese, crumbled (optional)
  • 2 tbsp (30ml) olive oil
  • 1 tbsp (15ml) lemon juice
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
Method

1. Combine all ingredients in a large mixing bowl.
2. Toss with olive oil, lemon juice, oregano, salt, and pepper.
