Ingredients

1 can (400g) chickpeas, drained and rinsed

1 cucumber, diced

1 cup (150g) cherry tomatoes, halved

1/4 cup (40g) red onion, finely chopped

1/4 cup (30g) olives, sliced

2 tbsp (30g) feta cheese, crumbled (optional)

2 tbsp (30ml) olive oil

1 tbsp (15ml) lemon juice

1/2 tsp dried oregano

Salt and pepper to taste
Method
1. Combine all ingredients in a large mixing bowl.
2. Toss with olive oil, lemon juice, oregano, salt, and pepper.
